Has anyone used another model type to get a SIPOC 'like' model completed with more flexibility than the SIPOC model type allows?

I fully agree with Veronika. From my point of view the Aris SIPOC model covers all what is needed. See my test example below (sorry it's in German). You have a variety of symbols and you can add more columns than the five classical ones if needed.
