I'm working on an Enterprise BPMN Collaboration Diagram. Some of the Task have longer text and get truncated on screen. Is there a way the Task's Width and Height adjust automatically depending on the length of the text

There is functionality for this:
But, it will work only one single line. It will not cover all the space within and then stretch the object. TBH, this is a bad practice.
The better practice is setting up the standard size for the object in your template, making it a little larger. For BPMN tasks, 130x130% size works very well. Most of captions (names) will fit this size, and your overall model will look much better.
